Farro is a type of grain with a nutty flavor and ancient roots, so it’s a great alternative to rice. Sweet bell peppers paired with farro make this healthy recipe a satisfying side dish or light entree.

  1. Cook farro according to package directions, substituting water with vegetable broth.
  2. In a large salad bowl, toss cooked farro, bell peppers and red onion.
  3. In a small bowl, whisk garlic, parsley, lemon juice, olive oil, mint and liquid aminos, if using.
  4. Pour dressing over the farro mixture and toss to combine.
  5. Refrigerate salad, covered with plastic wrap, for at least 1 hour. Serve cold or at room temperature.
