German potato salad

Potato salad doesn’t have to be smothered in mayonnaise to taste delicious. You’ll love this savory potato salad, flavored with apple cider vinegar and sweet onion without adding fat or extra calories. Serve it warm at your next summer gathering.

Directions

  1. Place potatoes in a large saucepan and cover with water.
  2. Bring to a boil over high heat.
  3. Reduce heat to low and simmer until potatoes are tender but still firm, about 15 to 20 minutes.
  4. Drain in a colander and transfer to a large bowl.
  5. Add onion.
  6. In a small bowl, whisk together mayonnaise, mustard, olive oil, vinegar, sugar, parsley, salt, and pepper (to taste).
  7. Add mayonnaise mixture to potatoes. Stir gently.
  8. Add turkey bacon and stir to combine.
  9. Let stand for 1 hour before serving.
