  1. Preheat oven to 350°. Arrange baguette slices on a baking sheet and lightly toast in oven for about 7 to 8 minutes. Set aside.
  2. In a bowl, combine egg substitute, half and half and cream cheese. With a mixer or whisk, beat until frothy. Add chives and mix again.
  3. Lightly coat a skillet with nonstick cooking spray and heat over medium heat until hot. Pour egg mixture into skillet and let sit for 1 minute. With a spatula, scramble eggs.
  4. As eggs set, add salmon and black pepper to taste. Stir.
  5. Evenly distribute the egg mixture on baguette slices. Garnish with additional chives if desired. Serve warm.
