  1. Preheat oven to 450°F.
  2. With a sharp knife, cut sweet potatoes, with skins on, into French fry-style sticks.
  3. In a large bowl, combine potato slices, oil, pepper and salt. Toss to coat sweet potatoes in oil and seasonings.
  4. Place a wire rack on top of a baking sheet and spread potato slices in a single layer on rack.
  5. Sprinkle cheese over sweet potato slices.
  6. Bake for 40 minutes, or until desired crispness. Serve immediately.
