Tomato Mango Salad

This refreshing summer salad pairs sweet and salty flavors with fresh tomatoes and mango plus a hint of blue cheese. A simple, low calorie basil salad dressing can be made in minutes.

Ingredients

  • 1/4 cup red wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1/3 cup chopped red onion
  • 1/8 tsp salt
  • 1/2 cup chopped fresh basil leaves, plus additional whole leaves for garnish
  • 10 Roma tomatoes ( about 1- 1/2 lbs) sliced 1/4 inch thick
  • 3 large ripe mangoes peeled and sliced 1/4-inch thick
  • 1/3 cup crumbled blue cheese

Directions

Make the Dressing

  1. In a small bowl, combine the vinegar, olive oil, red onion and salt, and whisk to combine well.
  2. Add the 1/2 cup chopped fresh basil and stir to combine.

Prepare the Salad

  1. On a large platter, arrange the tomato and mango slices.
  2. Stir the dressing and drizzle over the tomatoes and mangoes.
  3. Sprinkle the blue cheese on top and garnish with whole basil leaves.
