This refreshing summer salad pairs sweet and salty flavors with fresh tomatoes and mango plus a hint of blue cheese. A simple, low calorie basil salad dressing can be made in minutes.
Nutrition Facts
- 1/4 cup red wine vinegar
- 1/4 cup extra virgin olive oil
- 1/3 cup chopped red onion
- 1/8 tsp salt
- 1/2 cup chopped fresh basil leaves, plus additional whole leaves for garnish
- 10 Roma tomatoes ( about 1- 1/2 lbs) sliced 1/4 inch thick
- 3 large ripe mangoes peeled and sliced 1/4-inch thick
- 1/3 cup crumbled blue cheese
Ingredients
- 1/4 cup red wine vinegar

Directions
Make the Dressing
- In a small bowl, combine the vinegar, olive oil, red onion and salt, and whisk to combine well.
- Add the 1/2 cup chopped fresh basil and stir to combine.
Prepare the Salad
- On a large platter, arrange the tomato and mango slices.
- Stir the dressing and drizzle over the tomatoes and mangoes.
- Sprinkle the blue cheese on top and garnish with whole basil leaves.
